Chicken, broccoli, cheese and Quinoa casserole… Clean comfort food! (Taken with Instagram)
- 1/2 cup uncooked Quinoa, cooked in 2 cups water.
- 8 oz chicken cut into bit size pieces
- 1 head fresh broccoli chopped
- 1 cup sour cream
- 1/2 cup mayonnaise
- 1 clove garlic
- 1 cup shredded cheese
- salt, pepper, and spices to taste
I cooked the Quinoa seperately first then pulled it off the heat to let it cool. In a large saute pan I browned the chicken which I spiced with garlic and salt and pepper. After a few minutes, I added the broccoli and garlic clove. Stir regularly until broccoli becomes tender. Turn off heat and add Quinoa. In a serperate bowl, mix sour cream, mayo, all but 1/4c of cheese and flavor with pepper and spices. Add the mixture to the pan with chicken and broccoli and stir. Pour mixture into a glass baking dish and top with the extra cheese. Bake for about 15 to 20 minutes until hot through and cheese on top has melted. Enjoy.
